The contamination of food by chemical hazards is a world-wide public health problem. Contamination may occur through environmental pollution of the air, water and soil, such as the case with heavy metals and certain organochlorine compounds, or through the intentional use of various chemicals, such as pesticides, veterinary drugs and other agrochemicals. Improper use of food additives and contaminants resulting from food manufacturing and processing can also adversely affect health. While acute poisonings due to chemical contaminants in food are regularly reported, the more serious concern is due to long-term low-level exposures to chemicals which are known to cause chronic health problems, including birth defects, neurological disorders, damage to liver, kidney and other organs, and cancer.
